My project is in Swiss German to English, but I cannot use my DE to EN SDL Cloud NMT function, because it doesn't accept Swiss German. I have no option to select simply DE - EN

The SDL Translation Cloud engines don't distinguish between language variants so this should work.
In SDL Language Cloud -> Resources -> Translation Engine
1) Check the Translation Engine config you have setup has the correct language pair configured.
2) Check the Translation Engine section and make sure an engine is selected for German to English. I normally hit the add button and see if there are any missing to add.
Failing that log a call with the friendly support team and I'm sure they'll help.
